Turkish style pilaf

    1oz  butter. 1tsp olive oil
1 onion peeled and chopped. 1/2 red pepper, deseeded and diced
    1tsp  ground mixed spice. 1/2 tsp turmeric
    9oz  long grain rice. 1 pint boiling veg stock
    2oz  dried apricots. 8stoned dates, chopped
    1oz  flakes almonds. 1tbsp chopped parsley or coriander

Heat butter and oi, in large pan and fry onions and pepper for 2-3 mins, to soften. Add spices and rice, and fry for a further 2 mins, stirring occasionally.

Pour in stock and bring to boil. Lower heat, cover and simmer for 20mins, or until liquid has been absorbed and rice is just tender. Fold in chopped apricots and dates, and remove from heat.

Place in a clean, folded tea towel between rice and lid and stand for 5-10 mins. Fluff up rice with a fork and fold in almonds and chopped parsley or coriander. Tfr to a warmed second dish and serve immediately.

Serves 4. Calories per serving 390.
