    1 med  red onion, sliced and separated into rings.
1/2 cos lettuce
    1/2  cucumber, thinly sliced
    1  green pepper, seeded and sliced
    2  beefsteak tomatoes, thinly sliced
    8  black olives, stoned and sliced
    4oz  feta cheese crumbled
    1-2 tsp  chopped fresh parsley

Dressing: 4tbsp olive oil,2tbsp lemon juice, 1 garlic clove; crushed, salt and pepper; to taste, 1/2 tsp dried oregano and 1/2tsp clear honey.

Put onion rings in a sieve or colander. Pour over boiling water, then rinse in cold water and drain well put onion rings in a bowl. Make dressing by putting all ingredients in a bottle and shake vigorously until blended. Spoon 2tsp over onions, mix well and leave to marinate.

Tear lettuce leaves and arrange in a salad bowl. Arrange cucumber, green peppers, tomatoes and onions in layers over lettuce. Top it with sliced olives and feta cheese. Sprinkle with parsley and remaining dressing.

Good served with warm pitta or Greek sesame bread. Also kebabs, steak and chicken.
