Garlic mushrooms

    1lb  button mushrooms
    2oz  butter, melted
    1tbsp  sunflower oil
    2  garlic cloves, crushed
Squeeze lemon juice
    1tbsp  chopped fresh parsley
      Salt, to taste
      pepper, to taste

Oven. Gas7/220C/425F.

Wipe mushrooms and trim stalks. Put mushrooms into boiling salted water and simmer for 2-3 mins. Drain well, then put into a shallow ovenproof dish.

Mix together butter, oil, garlic, lemon juice, parsley, salt and pepper. Pour over mushrooms. Cook in oven for 20 mins. Serve straight away.

Boiling the mushrooms stops them giving out too much natural liquid when cooked in garlic butter.

Serves 4. Calories per serving 151.

Good with Italian breadsticks or crusty French bread.
