    10oz  plain flour sifted
    7oz  butter, chilled and diced
    1 large  egg beaten
4floz whipping cream, whipped to soft peaks
    5oz or 150g  hard cheese, such as Parmesan, gruyere or Gouda, grated

Oven. Gas6/200C/400F.

Place flour and butter in a bowl and, using a round tipped knife, hack butter until mixture resembles coarse crumbs. Reserve a tsp of egg. Stir in remaining egg with cream. Quickly and gently work to form a dough. Cover and chill for several hours.

Knead dough lightly on a floured board and roll to a 15x30cm oblong. Fold dough into three and roll out to original size. Repeat. Brush pastry with left over egg and sprinkle over cheese. Roll lightly to help cheese adhere.

Cut into strips measuring 1x15cm and twist firmly. BKe for 10mins on trays lined with parchment. Cool on tray.
