Refrigerator Biscuits

Ingredients: 150 gms butter or margarine 150 gms sugar | |
1 | egg, beaten |
225 gms flour | |
1 | lemon, finely grated rind |
1/4 tsp | vanilla essence |
Method:
1.Grease 2 baking sheets.
2.Cream together butter or margarine until pale & fluffy, beat in egg & vanilla.
3.Stir in the flour & lemon rind, mix to form a firm paste and knead lightly to a smooth paste.
4.Wrap the paste and chill in the refrigerator for 25-30 minutes.
5.Shape dough into long roll about 2 inches in diameter and 8 inches long.
6.Wrap in waxed paper or clear plastic wrap and refrigerate for at least 40 minutes.
7.Cut off 1/4 inch slices and place on the baking sheets and bake in a 375*F oven for 12-15 minutes.
8.Cool on a wire rack, this recipe makes about 30 biscuits.
