Banana Biscuits

Ingredients: | |
3 small | ripe bananas, peeled & mashed |
1 cup | lite soy milk or other milk alternative |
2 tbsp | oil |
4 1/4 cups | unbleached white flour |
1 tbsp | baking powder |
Method:
1.Preheat oven to 425*F, mix the mashed bananas, soy milk and oil together in a large bowl.
2.Add the flour and baking powder and stir well.
3.Place dough on a floured surface and knead for 3 minutes, using a rolling pin, roll dough to a 1/2 inch thickness.
4.Cut into 2-inch wide circles using a cutter or tin can.
5.Place biscuits on a lightly oiled cookie sheet, bake for 20 minutes or until browned.
6.Serve warm.
