Banana Biscuits

Ingredients:
    3 small  ripe bananas, peeled & mashed
    1 cup  lite soy milk or other milk alternative
    2 tbsp  oil
    4 1/4 cups  unbleached white flour
    1 tbsp  baking powder

Method:

1.Preheat oven to 425*F, mix the mashed bananas, soy milk and oil together in a large bowl.
2.Add the flour and baking powder and stir well.
3.Place dough on a floured surface and knead for 3 minutes, using a rolling pin, roll dough to a 1/2 inch thickness.
4.Cut into 2-inch wide circles using a cutter or tin can.
5.Place biscuits on a lightly oiled cookie sheet, bake for 20 minutes or until browned.
6.Serve warm.
