Pulled Pork Sandwiches

2 T smoked paprika..........................................1 T mustard powder 1/4 c + 1 T packed dark brown sugar..............salt & pepper
    4 Lbs  boneless untrimmed pork shoulder blade roast, (Boston butt)

1 c cider vinegar................................................1/2 c ketchup
2 t crushed red pepper......................................2T lite mayo
2 (14 oz) bags Cole slaw mix............................16 white hamburger buns

In a 5-6 qt slow cooker, combine paprika, mustard, 1/4 c brown sugar, 1 t salt and 1 T fresh ground black pepper. Add pork and rub mixture all over it. Arrange pork to a single layer, fat side up.

Whisk vinegar, ketchup, red pepper, 1 t salt, 1 t fresh grd pepper and 1 T brown sugar together. Reserve 1/3 c sauce in refrigerator. Pour 1 c water and remaining sauce into slow cooker. Cover and cook on low 8-10 hours until meat is fork tender.

Carefully transfer meat to a large bowl. Remove fat and skin and discard. Using 2 forks,shred meat into small pieces. Carefullynpour sauce from slow cooker into a fat separator. Pour half mover the meat and remaining sauceninto gravynboat.

Prepare coleslaw with reserved sauce and mayonnaise. Toss until well combined. Lightly toast buns, divide meat ontombottoms, top with coleslaw and bun top. Serve with extra sauce on side.
