| 1 tsp | coriander seeds |
| Swirl until fragrant-3 mins. Transfer to glass jar. Add: | |
| 2/3 c | olive oil |
| 1 T | chopped fresh Rosemary |
| 1 tsp | grated lemon rind |
| 1 T | lemon juice |
| 1/2 tsp | hot pepper flakes |
| To seeds; seal and shake. Add: | |
| 3 c | feta cubes. Cover. |
Gently turn jar to marinate. Chill 12 hrs. Keeps well up to 5 days.
