Spicy Joe Wrap Recipe

2 | whole onion, (s), green, tops and bulbs |
1 medium | pepper, (s), green, bell, cored, seeded and chopped |
2 tablespoon | oil, canola |
1 cup(s) | carrot, (s), shredded |
4 cup(s) | vegetarian crumbles |
2 cup(s) | tomato sauce, no added salt |
2 tablespoon | Mexican seasoning, salt-free |
* 6 inch(es) tortilla(s), flour, whole-wheat, 4 whole | |
1/4 cup(s) | salsa verde |
Preparation
1. Wash onions and pepper under running water.
2. Chop onions and peppers into small chunks.
3. In a large nonstick skillet, heat oil over medium heat.
4. Add onions, pepper, and carrots to skillet. Saute until tender-crisp.
5. Add vegetarian crumbles, saute 2 minutes.
6. Add tomato sauce and Mexican seasoning.
7. Stir and heat until steaming hot. Arrange tortilla on plate.
8. Fill tortilla with mixture and top with salasa.
9. Roll up, and enjoy.
