      Shortcrust pastry
    1  egg beaten
Filling:
    2  eggs
6 floz milk
    Pinch  salt
    pinch  paprika
    1/2 tsp  dried thyme
    1/2tsp  dried sage
    1  garlic clove, crushed
    100g  Emmanuel or gruyere cheese, grated
    3tbsp  grated Parmesan

Oven. 200C/400F/gas6

Make pastry, chill. Line and grease 4 small tins. Add pastry and prick base. Bake blind for 10 mins.

Mix eggs with milk, add salt, herbs, garlic and paprika. Beat well. Sprinkle cheese over bases of pastry cases and top with egg mixture.

Reduce oven to 180C/350F/gas4 and bake quiches for 25-30 mins or until filling is set.

Good served with salad or French bread or granary rolls.
