Mini quiches with Swiss cheese

Shortcrust pastry | |
1 | egg beaten |
Filling: | |
2 | eggs |
6 floz milk | |
Pinch | salt |
pinch | paprika |
1/2 tsp | dried thyme |
1/2tsp | dried sage |
1 | garlic clove, crushed |
100g | Emmanuel or gruyere cheese, grated |
3tbsp | grated Parmesan |
Oven. 200C/400F/gas6
Make pastry, chill. Line and grease 4 small tins. Add pastry and prick base. Bake blind for 10 mins.
Mix eggs with milk, add salt, herbs, garlic and paprika. Beat well. Sprinkle cheese over bases of pastry cases and top with egg mixture.
Reduce oven to 180C/350F/gas4 and bake quiches for 25-30 mins or until filling is set.
Good served with salad or French bread or granary rolls.
