BBQ Fried Chicken

Ingredients: 680 gms skinless, boneless chicken breast halves, cut into strips | |
1-1/2 | eggs |
120 ml | water |
60 ml | milk |
20 gms salt 5 gms black pepper 375 gms all-purpose flour 35 gms salt 10 gms minced garlic 10 gms dry mesquite flavored seasoning mix | |
475 ml | oil for frying or as needed |
3 gms butter | |
170 (12 oz) bottle | barbecue sauce |
Method:
1.In a large, whisk together the eggs, water, milk, 2 tbsp salt, 2 tbsp pepper with a fork until smooth.
2.In another large bowl, stir together the flour, 1/4 cup salt, 5 tsp pepper, garlic & mesquite seasoning.
3.Fill a large heavy skillet or wok halfway full with oil.
4.Heat to 365*F (180*C), use a fork to pick up one chicken strip at a time and dip it into the egg mixture, then into the flour mixture, back into the egg mixture & into the flour mixture again.
5.Place coated strips into the hot oil to fry.
6.Do not over crowd, just cook in batches.
7.Once chicken is browned on one side, flip over and brown on the other strip.
8.Preheat the oven to 300*F (150*C) .
9.Butter one 12*20" glass baking dish, or 2 9*13" baking dishes.
10.Pour enough barbecue sauce into the dish to coat the bottom.
11.Arrange fried chicken strips in rows in the prepared dish.
12.Pour remaining sauce over the top.
13.Bake for 10-15 minutes in the preheated oven, until the sauce is caramelized onto the chicken.
