Garlicky chicken Kiev - Rosemary conley

4 | chicken breast skinned |
2oz | low fat spread |
2 garlic cloves crushed | |
1tbsp | finely chopped chives |
Salt | |
ground black pepper | |
2 tbsp | flour |
1 | egg beaten |
4tbsp | cornmeal |
Oven. 200C/400F/gas6
Slice through centre of chicken breast to make a pocket. Mix low fat spread with garlic and chives and season. Distribute between breasts. Roll chicken in flour, then the beaten egg and finally the cornmeal. Place on a baking tray and bKe for 25-30 mins until cooked through.
