6oz | sultanas |
4floz dry cider or apple juice | |
6oz | butter |
8oz | caster sugar |
2 | eggs |
10oz | plain flour |
1 1/2 tsp | baking powder |
1tsp | cinnamon |
Grated zest of 1 lemon | |
2 large | cooking apples, peeled, coded and thinly sliced |
Creme fraiche to serve
Oven. 160C/fan140C/gas3
Soak sultanas in the cider or juice overnight. Grease and line an 8" springform tin.
Cream butter and sugar together. Add the eggs, one at a time, beating as you go. Fold in the dry ingredients, lemon zest and sliced apples. Add sultanas and any juices, then spoon into tin and bake for 40-45 mins or until a skewer inserted comes out clean.
Leave to cool in the tin, then tfr to a wire rack. Reheat if you are serving as a pudding and serve with creme fraiche.
