4 medium | egg whites |
12oz | caster sugar |
1tbsp | rosewater |
1/2 tsp | vanilla extract |
9oz | ground almonds |
2oz | pistachios, (optional) |
Pistachios to decorate
Oven. 200C/fan 180C/400F/gas6
Line and grease 2 baking sheets. Put egg whites in a large grease free bowl. Add sugar and whisk until thick, then add rosewater and vanilla and continue to whisk until soft peaks form. Add almonds and chopped pistachios and gently fold in. Spoon tblsp size mounds on to the baking sheet, spacing them well apart. Dot with halved pistachios and bake for 12-15 mins until just golden and set.
