American Cheesecake

1 large | ready baked flan case |
675g | full fat soft cream cheese |
225g | caster sugar |
3tbsp | cornflour, sifted |
2 med | eggs |
1tsp | vanilla extract |
300ml | double or whipping cream |
Oven. 180C/350F/GM4. Serves 8
Lightly grease a 10" spring form cake tin
Trim the flan case to line the prepared cake tin
Beat cream cheese in a large bowl until smooth. Sprinkle over sugar and cornflour and mix well. Beat in eggs and vanilla extract. Slowly add cream and fold into cream cheese mixture until smooth. Pour into prepared tin and p,ace in roasting tin filled with just enough hot water to cover the bottom. This will create steam during cooking.
Bake for 40-45 mins or until cheesecake is pale and golden and just set. It will wobble very slightly in the middle and will firm up completely as it cools.
