6 large | baking potatoes |
2tsp | cooking oil |
1-1.5 tsp | chili powder |
8 strips | crisp cooked bacon, crumbled |
2/3 cup | finely chopped tomatoes, (medium size) |
2tbsp | finely chopped green onion |
1 cup | shredded cheddar cheese |
1/2 cup | dairy sour cream, (opt.) |
Directions:
1. Clean and poke potatoes with fork. Bake in a 425 oven for 40-45 mins. or until tender; cool.
2. Cut each potato into 4 wedges lengthwise. Scoop out the inside of each wedge. Cover and chill the leftover white portion for other use (mashed potatoes)
3. In small bowl combine the chili powder, oil, and hot pepper sauce. Usuing a pastry brush, brush the insides of the wedges w/ the oil mixture. Place the potato wedges in a single layer on a large baking sheet. Sprinkle the wedges w/ bacon, tomato, and green onion; top w/cheese.
4. Bake for 10 min.
