Cheddar, Corn, and Potato Chowder

3 tbs | Sweet Butter |
1 | yellow onion, chopped |
1 tbs | all-purpose flour |
32oz | vegetable stock |
2 1/2 cups | yukon gold potatoes, diced |
2 cups | frozen corn |
2/3 cup | milk |
1 1/2 cups | cheddar cheese, shredded |
salt | |
pepper |
Saute onions in butter over medium heat for 5 min.
Mix in flour, coating the onions
Add stock and bring to a boil, whisking constantly until smooth
Reduce heat and add potatoes
Simmer for 20 min.
Slightly mash potatoes then stir in corn and milk
Cook 5 min. and stir in cheese while off heat
Season with salt and pepper
