Lemony Chicken With Fresh Coriander

Ingredients: | |
2 pcs | fresh Ginger root, (1" cubes) coarsely chopped |
1/4 cup | water |
2/3 cup | water |
2 1/2 lbs | chicken breasts |
5 cloves | garlic, minced |
7 oz | coriander, minced |
1/2 oz | jalapeƱos, minced |
1/4 tsp | cayenne |
2 tsp | cumin |
1 tsp | coriander |
1/2 tsp | turmeric |
1 tsp | salt |
2 tbsp | lemon juice |
Method:
1.Put the Ginger & 1/4 cups water into a blender.
2.Blend till you have a paste.
3.Put the oil in a wide, heavy, preferably non-stick pan over medium-high heat.
4.When the oil is hot, put in as many chicken pieces as pan will hold in a single layer and brown on both sides.
5.Remove the chicken pieces with a slotted spoon and put them in a bowl.
6.Brown all the chicken pieces this way.
7.Add the garlic to the hot oil.
8.As soon as the pieces turn a medium-brown, turn heat to medium and pour in the Ginger paste.
9.Stir-fry it for a minute.
10.Now add fresh coriander, jalapeƱos, cayenne, cumin, turmeric and salt.
11.Stir and cook for a minute.
12.Put in all the chicken pieces as well as any liquid that might have accumulated in the chicken bowl.
13.Add 2/3 cups of water and the lemon juice.
14.Stir and bring to a boil.
15.Cover tightly, turn heat to low and cook for 15 minutes.
16.Turn the chicken pieces over.
17.Cover again and cook another 10-15 minutes or until the chicken is tender.
18.If the sauce is too thin, uncover the pan and boil some of it away.
