Oven-Steamed Salmon

4 | 4 oz. fillets fresh center-cut salmon, skin-on |
1/2 tsp. | kosher salt |
1/4 tsp. | coarsely ground black pepper |
Fill a pan with 1 inch of hot water. Place the pan in the oven before adding the water to avoid sloshing it on the floor. Preheat oven to 325°. Spray cooling rack with nonstick spray.
Remove pin bones from fillets; season fillets with salt and pepper. Place prepared fillets, skin-side down, on the rack, 1/2-inch apart. Place prepared rack on top of the water-filled pan in the oven.
Oven-steam salmon 15–18 minutes, or until desired doneness is reached. Serve with Creamy Champagne Sauce and steamed green beans.
