Karen's Spring Rolls with Feta

1 c | feta in matchsticks |
1 T | olive oil |
1 clove | garlic, chopped |
2 tsp | fresh oregano, 1/2 tsp dried |
1 T | lemon juice |
Pepper | |
4 large | rice wrappers |
1/2 c | julienned carrots |
1/2 c | julienned cucumber |
1/2 c | julienned yellow or red pepper |
1/4 c | thinly sliced red onion |
Stir gently: Feta | |
Oil | |
Garlic | |
Oregano | |
Lemon juice |
Place a clean towel on counter. Dip a rice paper in water at room temp for 12 secs.
Place on towel and place on 1/4 feta, and 1/4 of other ingredients.
Keep 1" of edges free.
Fold in bottom edge, each side and roll up firmly. Let rest, seam down, for 15 mins before serving. Best at room temp.
