40gsugar | |
75g | extra light marg |
2 | eggs beaten |
225gplain flour | |
2tsp | baking powder |
1tsp | ground Ginger |
1tsp | ground coriander |
350g | carrots peeled and grated |
1x200g | tub of low fat cream cheese |
4tsp | icing sugar few drops of vanilla essence and fresh berries to decorate. |
Oven 150C/300F/GM2
Lightly grease 2 sponge tins. Using electric whisk cream together sugar and marg. Gradually mix in beaten eggs. Sieve flour and baking powder. Add half to the mixture of eggs. Then add remaining ingredients. Mix in the left over flour mixture and combine well. Bake for 1-1 1/2 hours
Make topping by mixing together the cheese, sugar and vanilla
Turn the cakes out and cool. Sandwich them together using half the topping and spread the other half on top. Decorate with fresh berries.
