Chicken melt

4 | skinless chicken breasts |
1/2tbsp | olive oil |
Small bunch basil roughly torn | |
50ml | dry White wine |
3tbsp | fresh pester Sacla's classic pesto |
4 slices | black forest ham |
100g | mozzarella torn into chunks |
Place each chicken breast inside a food bag and beat it with a rolling pin to 2cm thick. Heat oil add chicken scatter with basil season well. Cook over med heat for 6-8 mins. Add wine and cook for 1 min.
Preheat grill and transfer chicken to a baking sheet. Spread pesto over each chicken, top with a slice of ham and som mozzarella. Cook under the grill for 1-2 mins until bubbling and oozy.
Serve with a bowl of chips and a mixed salad.
