¼ | Vanilla Bean |
½ t | Vanilla Extract |
4 | Egg Yolks, (whisked) |
1 C | Heavy Cream, (Additionally) |
Preheat oven at 300 degrees. Scald the first cup of heavy cream with the vanilla bean. Add the sugar and the vanilla extract. Temper the egg yolks into the hot cream mixture. Add the cold cream and incorporate. Pour into individual ramekins and bake in a water bath until jiggley consistence (approximately 25 minutes but check). Chill. Just before serving top with superfine or brown sugar and torch.
