Rainbow Slice | |
1 cup | shredded low fat cheddar cheese |
1/2 cup | self raising flour |
5 eggs lightly beaten | |
3 slices | ham chopped |
5 | spring onions chopped |
3 cups | grated vegetables, (1 large zucchini, 1 small wedge of pumpkin, 1 large carrot or sweet potato and/or red capsicum |
Combine all ingredients in a bowl and pour into an 18cm square lined cake tin
Bake at 180 for 30-35 minutes or until set and golden
Allow to cool before turning out and slicing into fingers
