Shrimp and grits

    3 cups (1 pound)  stone ground grits
    1 tbs  salt
    1 tbs  butter
    2 cups  heavy cream
    2 cups  grated white cheddar
    1/3 cup  pick
    1/3 cup  jalapeño peppers, chopped
    1 1/2 tsp  red pepper flakes
    1 tbs  olive oil
    1 pound  shrimp
    1/8 tsp  old bay seasoning

Chopped cilantro ,optional for garnish

In a large sauce pan,bring 6 cups of water to a boil. Add grits and salt and whisk for 1 minute .turn down the heat and continue to whisk occasionally for the first 5 mins..once everything is well mixes,cover and simmer for 25 mins. Add butter and cook for 5 mins more.

While grits are cooking,in a medium saucepan combine cream,jalapeños,cheddar and red pepper flakes.simmer stirring occasionally until cheese melts,about 10 mins.remove from heat. Cover to keep warm until ready to serve.

In a large skillet,heat olive oil and add shrimp. Sauté just until done,3-5 mins. Sprinkle with old bay seasoning

Divide grits among 6-8 serving bowls.to each with 2-3 shrimp,then ladle on gravy.sprinkle with cilantro if desired
