Spinach,bacon and sweet potato salad

2 | sweet potatoes peeled, cut into pieces |
1/4 cup | olive oil |

2 slices | bacon |
1 red bell pepper cores and chopped | |
1 | red onion thinly sliced |
1 tablespoon | fresh ginger, peeled and minced |
1 teaspoon | ground cumin |
1 pound | fresh spinach |
juice from 1 orange
Preheat oven to 400. Put potatoes on a baking sheet,drizzle with two tablespoons of oil,sprinkle with salt and pepper; toss to coat.roast, turning occasionally till crisp.,about 30 mins. While potatoes cook bacon in stainless steel pan.drain on paper towel. Add remaining oil to pan.when hot add bell pepper,onion and Ginger to the pan. Cook about 5 mins. Until soft; stir in cumin and bacon.stir in orange juice and turn off heat. Put spinach in a bowl and add potatoes and toss with dressing
