Tomato Sauce, Cher's

2 tbsp | olive oil |
1/2 large | chopped onion |
1 tbsp | chopped garlic, heaping |
1 tbsp | Italian seasoning |
1 tsp | salt |
1 tsp | pepper |
6 oz | tomato paste, 1 can |
14.5 oz | diced tomatoes, 1 can |
1/2 cup | red wine |
16 oz | tomato sauce, 2 small cans |
Saute onions and garlic with olive oil. When almost translucent-
Add Italian seasoning, salt, pepper.
When onions are translucent add tomato paste
After a cupla minutes add diced tomato and tomato sauce
Taste for seasoning and adjust as needed
Cover and simmer
Variations:
Add ground beef, italian sausage, or other meat
Dried porcini mushrooms rehydrated in warm water(15-30 minutes, strain liquid), added just before simmering
