    1 medium  potato
    10  eggs
    1/2 cup  milk, chicken broth, or water
    1 tsp  Worcestershire sauce
    1/2 tsp  Montreal Chicken spice
    1/2 tsp  salt
    1/2 tsp  ground pepper
    2 tbsp  olive oil
    to taste  sausage
      bacon, alternative
      ham, alternative
    1 medium  onion
    1  red pepper
    1 clove  minced garlic
    100 g  spinach leaves
    1/2 cup  shredded Cheddar
      Swiss, alternative
      Parmesan, alternative
      ricotta, alternative
    1/2 cup  crumbled feta

Boil potato in salted water until slightly tender
In a skillet saute in this order; Onions, then peppers, then spinach. Set aside in veggie bowl.
Saute potatoes separately then fold into veggie bowl.
Cook meat (if needed) then fold into veggie bowl.
Beat together eggs, milk, seasons until well blended.
Spray a 12 cup cake pan with non stick spray.
Pour a small amount of the egg mix in, enough to cover the bottom of the cup.
Fill each cup with veggie bowl mix, then cover with remaining egg mix, then sprinkle with 1/2 cup of cheese (not feta)
Bake at 350 for 25 minutes, until egg mixture puffs and is set in center.
Using a spatula, loosen the fritattas, serve on platter with crumbled feta.

Left overs
Reheat 2 in microwave for 70 seconds
