1 large | eggplant |
1 T | olive oil |
1 small | onion, finely chopped |
1 clove | garlic, minced |
1 T | olive oil |
1/4 c | green bell pepper, finely chopped |
1 1/2 T | lemon juice |
black pepper, to taste | |

1. Preheat broiler.
2. Slice eggplant in half and rub inside with 1 T olive oil.
3. Preheat broiler.
4. Slice eggplant in half and rub inside with 1 tablespoon olive oil.
5. Place halves, cut side down, on baking pan.
6. Broil on middle rack of oven 20 to 25 min or until eggplant is quite soft.
7. Cool slightly. Scoop out the pulp and place it in a bowl. Mash well with fork. Set aside.
8. Over medium-hi heat, saute onion and garlic in 1 T olive oil until brown.
