Quick vegetable & chickpea pilaf

1 tablespoon | oil |
1 cup | chopped onions |
1 teaspoon | finely grated Ginger |
1 clove | garlic, chopped |
1/2 teaspoon | turmeric |
1/2 teaspoon | ground cumin |
1&1/2 cups basmati rice, rinsed 2&1/4 cups chicken stock | |
500g | frozen carrots |
cauliflower | |
broccoli | |
400g | can chickpeas, drained, rinsed |

Method:
Heat the oil in a large flat saucepan.
Cook the onions, Ginger, garlic and spices for 2-3 mins.
Add the rice and stir to coat in the spice mixture.
Pour in the stock and simmer, covered for 12-13 mins until almost all liquid has been absorbed
