Wiley's Wheat free Pita Bread

1 1/2 Cups | Warm Water |
1Tbl. | Rapid Rise Yeast |
2 tsp. | Xanthan gum |
2 Tbl. | Oil |
2 Tbl. | Sugar |
1/2 tsp. | salt |
4 1/4 Cups | White Spelt Flour |
Place in bread maker in order listed on dough setting and start machine. Or mix into dough, knead, turn into oiled bowl cover and let rise till double. Heat cookie sheets or baking stones in 500 degree oven.
Turn risen dough out onto floured surface, knead lightly cut into 8 pieces. Roll each piece out to 1/4 inch thick. Place each on piece of baking parchment paper about 12" by 14". You may stack them and cover with damp towel while baking two at a time. Put each round with it's parchment on cookie sheets or baking stones in 500 degree oven for 3-4 minutes. Brush with melted butter as they come out of the overn. These puff up beutifully in the oven. We have yet to try them other than fresh. They are delicious.
For Grilled Nan you can alternately roll the dough with an oiled rolling pin on an oiled surface and place them on a cast iron griddle or bbq grill. Cook until they begin to bubble turn with tongs and spread with melted butter while cooking second side and sprinkle with seasoning ( we spread fresh crushed garlic and sprinkled salt and parmesan cheese) It was great served with spaghetti.
