Italian Limoncello

    3-1.75 liters  Vodka
    4 cups  sugar
    5 cups  water

Zest of 25-30 lemons
1. Wash the lemons with a vegetable brush and hot water to remove any residue and wax. Carefully zest or peel the lemons so there is no white pith on the peel.
2. In a 5 gallon jug add the vodka and lemon peels. Cover the jug and sit at room temperature for 10 days and up to 40 days in a cool dry place.
3. In a large saucepan add the sugar and water and cook until thickened. 5-7 minutes. Let the syrup cool before adding it to the Limoncello mixture. Allow to rest again for 10 to 40 days.
4.strain and discard the lemon zest and keep in the freezer until ready to serve.
