Wagon Wheel Taco Salad

Dressing | |
1/4 c | olive oil or veg. oil |
2 tbs | lime juice |
3 tsp | cumin |
1/2 tsp | chili pwdr |
2 cloves | garlic, (minced) |
Combine in medium bowl, and mix well. | |
Salad | |
8 oz | wagon wheel pasta, uncooked |
1 can | black beans, (15 oz, drained & rinsed) |
1 can | corn, (drained) |
1 cup | chunky salsa, I use pace and add as much as it seems to need to be moist |
1 cup | sweet onion, (chopped) |
1 | green pepper, (chopped) |
2 | tomatoes, (diced) |
1/3 c | fresh cilantro, (chopped) |
8 oz | cheddar cheese, (cubed) |
1 small can | diced green chilis |
3 c | Fritos Corn Chips |
1 | avocado, (peeled and chopped) |
Cook Pasta and drain, rinse with cold water to cool. Meanwhile in large bowl combine beans, corn, salsa, onion, pepper, tomatoes and clilatro.
Add Pasta and dressins to bean mixture. Stir in chips, cheese, and Avocado just before serving
