parmesan garlic smashed potatoes

1 1/2 pounds | Yukon Gold Potatoes, cubed (about 6 medium potatoes) |
6 cloves | Garlic Clove, peeled |
1/4 cup | Light Sour Cream |
1/4 cup | Parmesan Cheese |
? cup | Nonfat Half And Half, warmed (or low-fat milk) |
Salt, to taste | |
Pepper, to taste |
directions:
1. Place the potatoes and garlic in a large pot of water and bring to a boil. Simmer 20 mins or until potatoes are fork tender. Drain
the potatoes and garlic and place in a large bowl.
2. Add the sour cream, cheese, and most of the milk. Using a potato masher or large fork, smash until smooth. Add the remaining
milk to reach desired consistency. Season with salt and pepper.
