easy cheesy microwave medley

2 Tbsp | Water |
2 cups | Cauliflower Florets |
1 cup | Carrots, sliced |
2 cups | Broccoli Florets |
3/4 cup | Low-Fat Evaporated Milk |
1 tsp | Cornstarch |
1/2 tsp | Dry Mustard, powder |
1/4 tsp | Garlic Powder |
? tsp Salt | |
3/4 cup | Shredded Cheddar Cheese, reduced-fat |
Pepper, to taste, (optional) |
directions:
1. Place the water, cauliflower and carrots in a large microwavable dish. Cover with plastic wrap and microwave on high for 4 mins.
Add the broccoli to the mix and microwave for 3 additional mins, or until all the vegetables are crisp tender (or softened to your
liking).
2. While the vegetables are cooking, thoroughly whisk together the milk, cornstarch, mustard, garlic powder, and salt in a medium
saucepan.
3.Place the pan over medium heat and cook, while whisking, until the mixture thickens and starts to bubble. Turn off the heat and
whisk in the cheese until melted and sauce is creamy. Add pepper, if desired.
4. Place the vegetables on a serving platter. Pour the cheese sauce over the vegetables and serve.
{remember if not using a platter to drain liquid from vegetables}
