Grilled fruit with creamy yogurt

1 cup | low-fat plain yogurt |
2 tsp | fresh-squeezed orange juice |
Zest 1 orange | |
4 med | peaches, nectarines ... |
3 Tbsp | maple syrup |
1. Line a strainer with 2 sheets of paper towel or cheesecloth and set over a med bowl. Place yogurt in a strainer and set aside in refrigerator for 1 hour, until yogurt is slightly thickened. Discard liquid that has drained out of yogurt and collected in a bowl. In a small bowl, combine strained yogurt, orange juice and zest, set aside.
2. Preheat grill or grill pan over med-high heat.
3. Cut peaches in half and remove pit.
4. Grill fruit, cut-side-down, until softened about 5 minutes
5. Divide fruit evenly among 4 plates. Top with quarter of yogurt mixture and 2 1/4 tsp maple syrup
