Breton-style onion soup with cheesy croutons

Low fat cooking spray | |
3 large | onions, finely sliced (600g) |
1.2 litres | beef stock made with two cubes |
1 | bay leaf |
For the croutons 6 thin slices wholegrain French stick (60g) | |
30g | gruyere cheese, grated |
1. Mist large lidded saucepan with low fat spray
2. Cook onions gently, uncovered, 15-20 mins until very soft. Add splash of
water if onions look like burning
3. Add stock and bay leaf. Cover and continue cooking further 15-20 mins
4. Season to taste and remove bay leaf
5. Preheat grill to medium. Place bread slices on grill rack and top with
cheese. Cook 1-2 mins until cheese melts
6. Serve soup in bowls with cheesy croutons floating on top
