Mushroom Burgers with Stilton and fries

2 large | field mushrooms |
1 tbsp | balsamic vinegar |
2 tbsp | finely chopped fresh parsley |
1 large | garlic clove, crushed |
75g | ciabatta roll |
A good handful of rocket | |
25g | Stilton, crumbled |
1/2 small | red onion, sliced finely |
For french fries | |
300g | floury potatoes, e.g. Maris piper, King Edward, cut into thin chips |
1. Preheat oven 200deg C
2. To make French fries, place sliced potatoes on nonstick baking sheet. Mist
with low fat spray and season well. Roast 20mins, turning occasionally
3. Meanwhile, place mushrooms in a bowl and drizzle with balsamic vinegar
4. Season well and add parsley and garlic
5. Heat non-stick griddle pan and toast ciabatta halves both sides until lightly
seared. Remove and set to one side
6. Add mushroom to pan and sear 3-4 minion each side till softened and
lightly charred
7. Pile rocket onto each ciabatta half, then top with mushroom and some
Stilton
8. Scatter onion over and serve with French fries
