Apple-Walnut Amaranth

    1 cup  amaranth
    3 cups  plain soy milk
    ΒΌ teaspoon  ground cinnamon
    Pinch  sea salt, (optional)
    1 large  apple, skin on, cored and diced
    1/2 cup  chopped walnuts

Place the amaranth, soy milk, cinnamon, salt (if using), and ap
niedium saucepan. Bring to a boil, stirring frequently. Cover pan
duce heat to low. Simmer for 25 to 30 minutes until amaranth is
with chopped walnuts and serve.

Chef Tip: Rinsing and soaking grains such as amaranth for a rev
before or overnight will help reduce cooking time. To save time
morning, you can combine all the ingredients except the walnuts ir
ered saucepan the night before, store it in your refrigerator, and
the morning. Store leftover grain in a tighty covered glass bowl an
for a busy morning. Thaw the night before in the fridge. Reheat
stove top.
