THEDA’S SWEET POTATO CASSEROLE

3 cups | sweet potatoes, cooked & mashed |
1 tsp. | vanilla |
1 cup | white sugar |
1 stick | margarine, softened |
2 | eggs, well beaten? |
1 (7 oz.) can | coconut |
Mix all ingredients together well, and pour into a large casserole. Cover With Best Holiday Topping (recipe below). Bake at 300 degrees for 75 minutes. This recipe can be easily doubled or halved. It can be prepared a day ahead and refrigerated and baked the next day or can be frozen and thawed before ?cooking whenever needed. So good and so easy! Serves 8. BEST HOLIDAY TOPPING | |
1 stick | margarine, softened?½ cup self rising flour |
1 cup | brown sugar |
1 cup | pecans, chopped |
Mix flour and sugar together, then add margarine and mix.
Next add nuts. Spread over sweet potato mixture.
