    3 cups  sweet potatoes, cooked & mashed
    1 tsp.  vanilla
    1 cup  white sugar
    1 stick  margarine, softened
    2  eggs, well beaten?
    1 (7 oz.) can  coconut
Mix all ingredients together well, and pour into a large casserole. Cover With Best Holiday Topping (recipe below). Bake at 300 degrees for 75 minutes. This recipe can be easily doubled or halved. It can be prepared a day ahead and refrigerated and baked the next day or can be frozen and thawed before ?cooking whenever needed. So good and so easy! Serves 8. BEST HOLIDAY TOPPING
    1 stick  margarine, softened?½ cup self rising flour
    1 cup  brown sugar
    1 cup  pecans, chopped

Mix flour and sugar together, then add margarine and mix.
Next add nuts. Spread over sweet potato mixture.
