Apple Coffee Cake

3 tsp | cinnamon |
1/3 cup | sugar |
4 1/2 cup | flour |
4 tsp | baking powder |
3 cups | sugar |
1 tsp | salt |
6 large | eggs |
1 1/2 cup | oil |
1/3 cup | frozen orange juice concentrate, undiluted |
Method:
1.Preheat oven to 325 deg.F
2.Prepare apples first, wash, peel, core and dice.
3.Measure 4 cups to them.
4.Add cinnamon and 1/3 cup sugar, mix well and set aside while you make the batter in a large bowl, mix the flour, baking powder, remaining sugar and salt.
5.Add eggs oil and orange juice concentrate.
6.Beat until smooth and blended.
7.Grease a 10-inch tube pan.
8.Spoon 1/3 of the batter into the pan, thoroughly drain away any juice from the apples.
9.Spoon 1/2 of the apples over the batter, top with another 1/3 of the batter then the remaining apples, top with remaining cake batter, bake for 1/2 hr, be sure not to under bake.
