Shredded Beef Filling Use for taco filling with lettuce, salsa/tomatoes, shredded cheese, and fresh guacamole. Ingredients | |
3lbs | boneless chuck steak |
1 T | salt |
3 qts. | Cold water |
1 | onion, peeled and chunked |
2 | celery stalks, with leaves attached, chunked |
2 | carrots, chunked |
3 sprigs | parsley |
Directions
Combine beef, salt, and water in a large pot. Boil until foam forms. Skim foam from top and reduce heat. Add onion, celery, carrots, and parsley. Simmer, covered, for 2 ½ to 3 hours, or until meat is very tender. Remove beef and cool to room temperature. Shred beef by hand (can be frozen later if desired). Makes enough for at least 12 to 16 burritos.
Strain the remaining broth and reserve- beef stock is good for cooking beans.
