Pork chops with apricot chutney

2/3 Cup | unsweetened dried apricots, quartered |
2/3 Cup | dried cranberry |
1/4 tsp | ground Ginger |
1/2 tsp | sea salt, divided |
1/4 Cup | orange juice |
2 Tbsp | raw honey |
8 | unsalted walnuts, chopped |
4 4 ounce boneless center cut pork chops, trimmed | |
1/2 tsp | ground chipotle pepper or crushed red pepper flakes |

1 prepare apricot chutney: combine apricots, cranberries, Ginger, 1/4 tsp salt, orange juice and honey in a small saucepan over med-low heat. Simmer for 5 min or until liquid is reduced by half. Stir in walnuts and cook for2 more minutes.
2 season pork with remaining salt and chipotle pepper. Heat a large sauté or grill pan over med-high heat. Mist with cooking spray. Cook pork for 4 min per side or until it reaches desired doneness. Serve with 1 Tbsp chutney.
