Apple Pie

1/2 cup | sugar |
1/2 cup | packed brown sugar |
3 Tbsp | all- purpose flour |
1 tsp | ground cinnamon |
1/4 tsp | ground ginger |
1/4 tsp | growing nutmeg |
7 cups | thinly sliced pared apples |
1 tsp | lemon juice |
1 pastry for double-crust pie (9 inches) | |
1 Tbsp | butter |
1 | egg white |
additional sugar |
Directions:
1. In a small bow, combine sugar, flour, and spices; set aside. In a large bowl, toss apples w/ lemon juice. Add sugar mixture; toss to coat. line a 9 in. pie pan w/ half the pastry. Place apple filling into crust; dot w/ butter. Roll out remaining pastry to fit top of pie. Cut a few splits in top. Beat egg white until foamy; brush over pastry. Sprinkle sugar on top. Bake at 375* F for 35 min. Increase temp. to 400* F and bake for about 10-15 mins. mre or until golden brown.
