Caramels

2 cups | Light Corn syrup |
2 cups | sugar |
3 cups | whipping cream |
1/2 can | sweetened condensed milk |
1 1/2 teaspoons | vanilla |
1/2 teaspoon | salt |
Boil the syrup and sugar together until mixture is almost ready to change color, (about as long as it takes to scald the cream). Stir throughout cooking. While this is cooking, scald the whipping cream in a double boiler (or 2 min. in microwave).
Add scalded cream to syrup sugar mixture slowly, keeping it boling.
Scald the condensed mild in the same pan.. (or just pour it in if you are Maya). Add it to the boiling mixturea little at a time. Cook to medium hard ball stage.
Add Salt, vanilla, and if not using for logs, 1 Cup nuts, before pouring out. (if desired).
If using for the logs.. then pour entire mixtuer on a buttered slab. Let cool for just a minute. Then place fondant log onto caramel. (which was really in the freezer this whole time).. and roll the caramel over the fondant log.
roll in a nut of choice... so that it's not sticky and gross. (there is no desired option here).
Wrap it in wax paper. Freeze and enjoy later. or now.
