Garlicky bean dip

2 | spring onions, trimmed and chopped, (reserve a few for garnish) |
1 | garlic clove, crushed |
410g can | butter beans, drained and rinsed |
200g | tub very low fat soft cheese |
Finely grated zest of 1 lemon | |
2 tbsp | roughly chopped fresh parsley, (reserve a little to garnish) |
Vegetable pieces, such as carrot and celery, to serve |
Serves 4
2 1/2 pro points per serving
1. Put onions, garlic, butter beans, soft cheese, lemon zest and parsley into
food processor
2. Season. Blend 15-20 seconds until smooth (add 1 tsp water if necessary)
3. Spoon into a bowl. Garnish with onion and parsley. Serve with vegetable
pieces
