Herb and gruyere cheese omelette

2 tsp | chopped fresh soft herbs, (e.g. Chives, basil, parsley) |
Low fat cooking spray | |
20g | grated gruyere cheese |

4 pro points per serving
1. Beat eggs with a splash of water and black pepper. Stir in herbs
2. Heat omelette pan. Mist with spray
3. Add egg and draw into centre with palette knife as it sets, allowing runny
egg to the edges
4. Cook 2-3 mins until almost set on top and golden underneath and sprinkle
cheese over
5. Fold omelette and slide onto plate. Serve with rocket
