Chocolate Orange Tiramisu

25ml | Cointreau |
1 | egg |
50g | caster sugar |
250g | quark |
150ml | dark coffee made with 2 tbsp dissolved coffee granules |
18 | sponge fingers |
25g | orange chocolate |
Serves 6
4 1/2 pro points per serving
1. Finely grate zest of 1 orange and set aside
2. Segment oranges, put segments in a bowl, stir in Cointreau and set aside
3. Place egg and sugar in bowl and set over pan of simmering water
4. Using electric whisk, beat until mixture is pale, thick and holds its shape
5. Remove from heat, whisk in quark and reserved orange zest
6. Take 6 x 200ml dessert glasses
7. Put coffee in shallow dish, dip half sponge fingers then divide between
glasses
8. Spoon half quark mixture between glasses then top with half grated
chocolate orange
9. Divide orange segments and juice, then repeat with sponge fingers and
quark
10.Finally sprinkle with remaining chocolate and chill at least 2 hours before
serving
