Veggie Toad in the Hole

75g | plain flour |
1 | egg |
75 ml | skimmed milk mixed with 50ml water |
1 tsp | fresh thyme leaves |
Low fat cooking spray | |
4 Quorn sausages | |
1/2 | red onion, cut into wedges |
6 | cherry tomatoes |
2 heaped tsp vegetarian gravy granules | |
1 small head | broccoli, cut into fleets and cooked to serve |

7 1/2 pro points per serving
1. Preheat oven to 200deg C
2. Sift flour into mixing bowl, make a well and break egg in
3. Using whisk, start to incorporate flour into egg, adding a splash of milk /
water when it gets too stiff. Gradually add all liquid to make smooth batter. 4. Add thyme leaves and set aside
5. Mist 2 individual shallow roasting tins (e.g. 7in round) with low fat spray. 6. 6. Add 2 sausages to each. Place in oven 10 mins
7. Meanwhile sauté onion wedges in small pan 4-5 mins using spray till
softened
8. Remove tins from oven and divide batter between them.
9. Divide tomatoes and onion between each tin and return to oven for 30 mins
until batter is golden and fluffy
10.Just before it's ready, make up gravy granules
11.Serve immediately with gravy and broccoli
