Sauté:
      Onion
      Celery
      Butter
Add to taste: -Salt and Pepper
      Garlic
      Parsley
      Oregano
Add:
      Potatoes, diced and peeled
Add water to cover vegetables twice over. Cook in separate pan: -Italian Sausage Drain and wash in colander, add to soup. Cook til tender-thicken by adding:
      Instant mashed potatoes or
      Cream
Top with shredded cheese and serve with cornbread (below) if desired. Connie's Scalloped Cornbread -Jimmy Dean hot sausage -Monterey Jack cheese
    3  eggs
    3 cans  cream of corn
    1-1 1/2 cups  cornmeal
    1  onion, diced

Brown sausage, drain, pour into large bowl and add all ingredients and combine.
Bake 375• for 45-50 minutes until brown.
